Let me preface this by saying these are way better than they look or sound. I almost didn't include the recipe because it's not a very "traditional" recipe and I figured most people would think, "ew." I told my mom and she said "do it! they're so good!" ... and mom's are always right so here we are.
This is a recipe my grandma would make for as long as I can remember ... although, I made it a little healthier for ya. Exact measurements can be tailored to taste. Hope you enjoy!
serving size: roughly 5-6 tostadas
• tuna (1 can, I used Trader Joe's solid white albacore tuna in water)
• corn tortillas (6) you can also use premade tostadas but making them yourself is healthier
• peas (about 1/4 - 1/2 cup)
• shaved carrots (I used baby carrots I had and peeled 'em. shaved until the peas to carrots ratio was even).
• salt to taste
• diced jalapeños (I used maybe 3/4 cups of the little can I bought but I wish I used more. I like the tostadas to have a little kick to them, but add as many as you see fit!)
• mayo (I'm not a huge fan of mayo so I substituted Trader Joe's vegan spread that's styled after mayo. I used about 3 tablespoons).
• optional: green onions
• Preheat oven (If you're making the tostadas, I went for 450*)
• Place tortillas on baking sheet and bake until crispy
• While the tostadas bake, combine tuna, mayo, carrots, peas, salt and jalapeños (also, the green onions if you're using them) in a bowl. Adjust the recipe to your liking. Make sure to drain the tuna enough so the mixture isn't too watery.
• Once the tostadas are just crispy enough, take them out of the oven and top with the tuna mix.
• That's it! So yummy and easy and tasty.
